Smoked Turkey Supreme - cooking recipe

Ingredients
    1 turkey, thawed, rinsed and patted dry
    1/4 c. salad oil
    1/2 c. salt
    1 c. vinegar
    1/4 c. cracked pepper
    2 Tbsp. finely minced parsley
Preparation
    Combine salt and oil in a two cup measuring cup.
    Using about 1/4 cup of the salt paste, rub the mixture
    over the large and wishbone cavities.
    To the remaining salt paste, add the vinegar, pepper and parsley.
    Place turkey in a water smoker (or if using other type of hooded grill, place a large water pan in the cooking unit) and smoke with hickory or apple wood 5 to 6 hours, depending on the size of the bird.
    While the bird smokes, baste with the sauce liberally every hour or so.
    The turkey will be nut brown with a tasty crust and moist inside.
