Sweet Pickles - cooking recipe
Ingredients

2 gal. cut up cucumbers
2 c. salt
1 gal. water
6 c. sugar
1 pt. vinegar
2 Tbsp. allspice
4 or 5 Tbsp. alum
Preparation

Add two cups salt to 1 gallon of water.
Bring to a boil.
Pour over cucumbers.
Let stand for 7 days.
Rinse well.
Pour clear boiling water over cucumbers.
Let stand for 1 day; drain.
Pour boiling alum water over cucumbers.
Use four or five tablespoons alum.
Let stand for one day.
The next day, soak in clear boiling water.
Make syrup (sugar, vinegar, allspice), boil and pour over cucumbers.
Let stand one day.
The next day, boil again.
Put in jars.
Boil juice down just enough to cover pickles.
