Shrimp Newburg - cooking recipe
Ingredients

1/3 c. butter
2 Tbsp. flour
2 c. light cream, warmed
4 egg yolks, slightly beaten
2 c. shrimp, cooked
1/4 c. sherry
2 tsp. lemon juice
salt to taste
1 Tbsp. parsley flakes
Preparation

Melt butter and blend in flour.
Stir in cream and cook slowly, until mixture thickens.
Stir small amount of hot mixture into egg yolks and gradually return to hot mixture.
Add shrimp and heat through.
Add sherry, lemon juice, salt and parsley. Serves 4 each 5-inch patty shells.
