Crispy Butternut Chicken - cooking recipe

Ingredients
    1/2 c. dry roasted peanuts
    1/4 c. cornflake crumbs
    1/3 c. buttermilk-based salad dressing
    2 1/2 lb. chicken pieces or cut-up fryer
    paprika
Preparation
    Chop peanuts finely in blender or food processor.
    Combine with cornflake crumbs on a piece of waxed paper.
    Pour salad dressing into pie plate.
    Remove skin from chicken and dip each piece in salad dressing, then roll in crumb mixture to coat. Arrange chicken on microwave meat or bacon rack, thick pieces toward the outside, thinner or bony pieces toward the center. Sprinkle with paprika.
    Cover with waxed paper.
    Cook in microwave on High for 15 to 18 minutes, rotating rack midway through cooking.
    Let stand for 5 minutes before eating, or cool slightly and refrigerate if transporting to a picnic!
