Chicken Gumbo With Shrimp - cooking recipe

Ingredients
    6 boneless, skinless chicken breasts, cut into 4 parts each
    12 medium to large shrimp, peeled (with tails left on)
    6 Tbsp. flour
    1/2 c. oil
    1 medium onion
    1 large green pepper
    1 stalk celery
    2 green onions (tops and roots)
    1 c. fresh parsley
    9 c. water
    salt and cayenne pepper to taste
Preparation
    Put oil in pot.
    Brown chicken to golden brown.
    Remove chicken from pot.
    Brown flour in oil in which chicken was browned until it is dark brown.
    Stir constantly.
    Do not stop stirring until flour has reached the desired color.
    Add chopped onion, green pepper and celery.
    Stir.
    Add water; stir.
    Add chicken. Cover.
    Bring to boil; reduce heat and simmer for 40 minutes.
    Add shrimp and green onion.
    Cover and continue to simmer for 20 minutes more.
    Add salt and cayenne pepper to taste.
    Cut off heat; serve over steamed white rice topped with gumbo file and chopped parsley.
