Italian Meatball Ragout - cooking recipe

Ingredients
    1 pound ground beef
    1 egg
    1/2 cup soft bread crumbs (1 slice)
    1 Tbsp. chopped parsley
    2 tsp. salt
    2 Tbsp. salad oil
    1 large onion, chopped (1 c.)
    1 clove garlic, minced
    1 small eggplant, pared & diced (4 c.)
    1 can tomatoes (about 1 lb.)
    1 tsp. sugar
    1 tsp. cumin seeds
Preparation
    Mix ground beef lightly with egg, bread crumbs, parsley, and 1 teaspoon of the salt until well-blended; shape into 24 balls. Brown, half at a time, in salad oil in a large frying pan. Remove with a slotted spoon and set aside. Stir onion and garlic into drippings in pan; saute just until soft. Add eggplant and meatballs. Mix tomatoes with remaining 1 teaspoon salt, sugar, and cumin seeds; pour over meatballs and eggplant. Cover.
