Pumpkin Bisque - cooking recipe

Ingredients
    1 1/2 Tbsp. butter
    1 small onion
    1 c. pumpkin puree or canned pumpkin
    1 3/4 c. chicken broth
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1 c. heavy cream
    salt and pepper
    2 scallions, thinly sliced for garnish
Preparation
    Saute onion in butter.
    Add pumpkin, chicken broth, 2 cups water, cinnamon and nutmeg.
    Bring to a boil; then simmer for 5 minutes.
    Reduce heat to low; add cream.
    Gently heat until cream is warm.
    Season with salt and pepper.
    Sprinkle with scallions before serving.
