Real Potato Soup - cooking recipe
Ingredients

4 cans fat free chicken broth
4 slices cooked bacon, crumbled
5 (10 oz.) potatoes, diced
8 oz. light Velveeta cheese
1/2 onion diced
1 large can mushrooms, drained
1/4 c. fat free sour cream
2 Tbsp. flour mixed with small amount of water
Preparation

Combine broth and potatoes, and cook for 20 minutes until potatoes are cooked through.
As potatoes are cooking saute onions in a pan sprayed with cooking spray. Then add onions, mushrooms, and bacon to potatoes.
When potatoes are soft stir in cheese and sour cream.
Simmer until cheese is melted.
Thicken with flour mixture.
One serving is one cup.
