Pottawattamie County Rye Bread - cooking recipe

Ingredients
    1 pkg. dry yeast
    2 c. warm water (112~)
    3 c. unbleached flour
    2 c. rye flour
    2 Tbsp. brown sugar
    2 tsp. salt
    2 Tbsp. soft shortening
    1 tsp. caraway seed
Preparation
    Dissolve yeast in warm water in large mixing bowl.
    Add half the mixed flours plus all the brown sugar, salt, shortening and caraway seed.
    As you mix, stir in remaining flour vigorously. Turn over twice in large, greased mixing bowl and cover with damp cloth.
    Let rise in warm place until double.
    Stir about 1/2 minute.
    Cut up and shape into loaves, using greased pan.
    Bake at 375\u00b0 about 50 minutes.
    Brush with shortening.
