Chinese Beef With Broccoli - cooking recipe

Ingredients
    1 lb. flank steak
    2 Tbsp. soy sauce
    1 Tbsp. sherry or dry vermouth
    1 Tbsp. cornstarch
    1 tsp. sugar
    1/2 bunch broccoli
    4 Tbsp. peanut oil
    1 tsp. salt
    1/4 c. chopped onion
Preparation
    Cut steak across grain into thin bite-size pieces.
    Pour soy sauce and sherry over steak.
    Sprinkle with cornstarch and sugar; mix well.
    Cut broccoli into thin slices.
    Peel stem; slice into 2-inch pieces.
    Pour half the oil into a skillet or Dutch oven. Add salt and broccoli.
    Cook over high heat, stirring constantly, for 2 minutes.
    Remove from skillet.
    Add remaining oil and onion, stir well and add the steak.
    Cook for 2 minutes.
    Add broccoli; mix thoroughly and serve.
    Makes 4 servings.
