Chicken Flamenco - cooking recipe

Ingredients
    6 chicken breasts, skinned and boned
    2 Tbsp. margarine
    1 c. each: chopped onion and celery
    1 medium green bell pepper, diced
    salt and pepper
    3 c. sliced fresh mushrooms
    2 c. chicken broth
    3 Tbsp. diced pimento
Preparation
    Season the chicken with salt and pepper; brown in a nonstick skillet in margarine.
    Transfer to a 3-quart or larger casserole. Add the diced pepper, celery and onions to the skillet; cook, stirring, for 5 minutes or until tender crisp.
    Spoon the mixture over the chicken.
    In a saucepan, bring broth to a boil; pour over the chicken and vegetables.
    Cover the casserole and bake in a preheated 325\u00b0 oven 30 to 45 minutes or until chicken is done. Add the mushrooms and pimento to casserole.
    Return casserole to oven to finish baking chicken.
    Makes 4 to 6 servings.
