Turkey Leftover Stir-Fry - cooking recipe

Ingredients
    1/2 c. chicken broth
    3 Tbsp. soy sauce
    3 Tbsp. cider vinegar
    2 tsp. cornstarch
    1/4 tsp. crushed red pepper
    1 Tbsp. oil
    1 red or green bell pepper, cut into thin strips
    4 scallions (each cut in half)
    1 Tbsp. grated fresh ginger
    1 clove garlic, minced
    2 c. cooked turkey strips
    3 c. cooked rice
    1/4 c. peanuts, coarsely chopped
    1 Tbsp. chopped cilantro or parsley
Preparation
    Combine broth, soy sauce, vinegar, cornstarch and crushed red pepper.
    In skillet, heat oil over medium-high heat.
    Add pepper strips and scallions.
    Cook, stirring, 5 minutes.
    Stir in ginger and garlic.
    Cook 1 minute.
    Stir in chicken broth mixture. Reduce heat to medium.
    Add turkey.
    Bring to a simmer.
    Cook until slightly thickened, about 3 minutes.
    Serve over rice with peanuts and cilantro.
