Tomato Shrimp Gumbo - cooking recipe

Ingredients
    2 Tbsp. oil
    1 lb. shrimp
    2 medium onions
    1 sweet red pepper
    1 clove garlic, crushed
    1 Tbsp. flour
    2 c. chicken stock
    1/8 tsp. salt and pepper
    4 whole tomatoes, skinned
    1 c. okra, chopped
    1 c. cooked rice
    1 tsp. gumbo file
Preparation
    Put oil in 3 quart pot.
    Clean and devein shrimp.
    When oil is hot, add shrimp and toss for 1 minute.
    Remove and add onions, red pepper and garlic.
    Cook until soft.
    Sprinkle on flour
    and toss.
    Add stock, salt, pepper, tomatoes (cut up), okra and
    rice. Make
    a
    paste
    of
    the file and 1 tablespoon water and add.
    Put shrimp back into pot, turn off heat; ready to serve.
    Makes 4 servings.
