Split Pea Soup - cooking recipe

Ingredients
    1 meaty ham bone or 2 c. ham, cut in large pieces
    1 lb. dried green split peas
    1 onion, diced
    1/2 c. chopped celery with tops
    2 to 3 sprigs fresh parsley
    2 to 3 cloves garlic
    2 to 3 qt. water
    salt and pepper to taste
Preparation
    Rinse
    split
    peas several times.
    Combine all ingredients
    in a
    large
    saucepan or Dutch oven.
    Cover with water. Cook
    on slow burner until peas melt to a smooth consistency. Add more water if necessary.
    Good served with French bread.
