Mexican Cornbread - cooking recipe
Ingredients

1 c. buttermilk
1 1/2 c. self-rising cornmeal
3 eggs, beaten
1/2 c. oil
1 c. cream-style corn
1/2 large green pepper, finely chopped
1 large onion, chopped
1 small hot red pepper, chopped
1 c. grated sharp Cheddar cheese
Preparation

Combine all ingredients except cheese and pour half of batter in 8-inch square pan (greased).
Cover with cheese.
Pour remaining batter over cheese.
Bake in preheated oven at 400\u00b0 for 35 to 45 minutes or until golden brown.
(Use more cheese, if desired.)
