Zucchini Casserole - cooking recipe
Ingredients

4 c. diced zucchini (1-inch squares)
1/2 c. shredded onions
3/4 c. shredded carrots
1 c. cream of chicken soup (undiluted)
2 1/2 c. herb stuffing (Pepperidge)
6 Tbsp. butter
1 c. water
Preparation

Simmer zucchini until tender; drain about 10 minutes.
Saute 4 tablespoons butter, onions and carrots until tender.
Mix with zucchini, 1 1/2 cups stuffing and soup in casserole.
Melt 2 tablespoons butter and 1 cup stuffing crumbs; sprinkle over casserole.
Bake at 325\u00b0 for 30 to 40 minutes.
