Ingredients

1 c. butter or margarine
3/4 c. sugar
1 tsp. lemon extract
1/2 tsp. vanilla
1 egg
1 c. shredded carrot
2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. soda
1 1/2 c. chopped walnuts
Preparation

In a bowl, beat together the butter and sugar until creamy. Beat in lemon extract, vanilla, egg and carrot.
Stir together the flour and dry ingredients.
Add to butter mixture, then the nuts. Drop by spoonfuls on greased cookie sheet.
Place about 1/2-inch apart.
Bake at 375\u00b0 for 12 minutes or until edges are brown.
Cool on rack.
Makes 6 dozen.
