Sweet Lemon-Onion Relish - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 medium onions, cut in 1/4-inch strips
    2 medium lemons
    2 Tbsp. lemon juice
    1/4 c. water
    5 Tbsp. sugar
    salt
    1 Tbsp. chopped fresh thyme
Preparation
    Sweat onions in oil.
    Squeeze juice from lemons and reserve. Cut rinds into 1/4-inch strips.
    Put in small pan.
    Cover with cold water; bring to boil.
    Pour out water; repeat up to 3 times. When onions are tender, add drained lemon strips, juice, water, sugar, salt and thyme.
    Cook, uncovered, over low heat, stirring occasionally for 20 minutes, until liquid is reduced and onions and lemons are glazed.
    Put up in glass jars; store in refrigerator.
    Makes 1 3/4 cups (1 serving).
    Serve with baked ham, lamb or chicken.
