Cajun Lima Beans - cooking recipe

Ingredients
    2 c. small green limas
    2 Tbsp. cooking oil
    2 Tbsp. flour
    1/2 c. finely chopped tomatoes
    1 medium onion, chopped (1/2 to 1 c.)
Preparation
    Make roux with oil and flour.
    Add onions and tomatoes. Simmer 5 minutes.
    Add lima beans and add cold water to cover beans.
    Cover and boil gently until beans are tender 1/2 to 1 hour.
