Smoked Turkey Gumbo - cooking recipe

Ingredients
    1 smoked turkey, boned and cut up
    Andouille (smoked sausage)
    3 to 4 onions, chopped
    1 c. green onion, chopped
    1 c. bell pepper, chopped
    1 tsp. dried mint
    1 Tbsp. garlic, chopped
    1 Tbsp. celery seed
    salt to taste
    1 c. dried parsley
    4 c. dry white wine
    6 1/2 drops bitters
    2 Tbsp. hot sauce
    4 Tbsp. Worcestershire sauce
    5 to 6 c. okra, sliced
    water
Preparation
    Make
    dark
    roux
    (see
    below).
    Add
    onions
    and
    bell pepper.
    When
    onion is clear, add parsley and green onion and cook for a few minutes.
    Add small amount of water and stir to make thick liquid.
    Add garlic and celery seed.
    Add remaining ingredients
    and
    cover with 2 to 4 inches of water (depending on desired thickness).
    Bring to a boil.
    Lower heat and cook 2 to 4 hours.
