Zucchini Casserole - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1/2 c. chopped onion
    4 zucchini (unpeeled), sliced
    4 tomatoes, peeled and sliced or 1 (1 lb.) can whole tomatoes
    1/2 (6 oz.) can tomato paste
    1 c. pitted ripe olives, sliced and juice
    1/2 c. grated Parmesan cheese
    1/4 c. seasoned bread crumbs
Preparation
    In large saucepan, heat oil; add onions and cook slowly until softened.
    Add zucchini and tomatoes; cook gently until zucchini is soft.
    Add tomato paste, olives and juice; turn into a greased 2 quart baking dish.
    Mix cheese and crumbs; sprinkle on top. Bake at 350\u00b0 for 20 minutes or until bubbly hot.
