Spicy Rice And Beans - cooking recipe

Ingredients
    4 Tbsp. oil
    2 c. long grain rice
    1 onion, finely chopped
    1 green bell pepper, chopped
    1 tsp. each: ground cumin and coriander
    1 to 2 tsp. Tabasco sauce
    salt
    3 1/2 c. stock
    1 lb. canned red kidney beans
    1 lb. tomatoes, coarsely chopped
    chopped parsley
Preparation
    Heat the oil in a casserole or a large, deep saucepan.
    Add the rice and cook until just turning opaque.
    Add the onion, bell pepper, cumin and coriander.
    Cook gently for a further 2 minutes. Add the Tabasco sauce, salt, stock and beans; bring to a boil.
