Rolled Chicken Washington - cooking recipe

1/2 c. finely chopped mushrooms (fresh or canned)
2 Tbsp. butter or margarine
2 Tbsp. all-purpose flour
1/2 c. light cream
1/4 tsp. salt
1/4 tsp. cayenne pepper
1 1/4 c. shredded sharp Cheddar cheese
8 deboned, skinned whole chicken breasts
2 slightly beaten eggs
3/4 c. fine dry bread crumbs
Preparation

Cheese Filling:
Cook mushrooms in butter for 5 minutes. Blend in flour; stir in cream.
Add salt and pepper; cook and stir until mixture becomes very thick.
Stir in cheese; cook over very low heat, stirring constantly, until cheese is melted.
Turn mixture onto pie plate; cover and chill overnight.
