Catfish Fingers With Three Sauces - cooking recipe

Ingredients
    1/2 c. yellow cornmeal
    1 tsp. chili powder
    1/2 tsp. oregano
    salt to taste
    1/3 c. low-fat milk
    1 egg
    vegetable oil
    4 catfish fillets (pond-raised)
Preparation
    In a bowl, combine first 4 ingredients.
    Beat together milk and egg.
    Cut catfish into thick sticks.
    Dip sticks into milk mixture, then in cornmeal.
    Heat oil to 350\u00b0.
    Fry sticks in small batches; drain.
    Serves 8.
