Fried Pies - cooking recipe

Ingredients
    4 c. all-purpose flour
    4 tsp. baking powder
    1 tsp. salt
    1 c. shortening
    2 eggs
    1 large can evaporated cream
    fruit of choice
Preparation
    Mix flour, baking powder, salt and shortening until fine.
    Mix eggs with cream; combine with flour mixture.
    Beat until stretchy. Refrigerate overnight.
    Roll out circles, using a small saucer as guide.
    Fill with fruit which has been cooked, sweetened, thickened and set overnight.
    Wet over filling; press with fork tines around edges.
    Fry in deep oil until golden brown.
