Chile Sans Carne(Meatless) - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 c. chopped onion
    2 large garlic cloves, minced
    1 red bell pepper, chopped
    1 to 3 Tbsp. hot jalapeno peppers, minced
    1/2 tsp. ground coriander
    1 3/4 c. canned chopped tomatoes
    2 Tbsp. ground cumin
    1 to 2 Tbsp. chili powder
    2 c. cooked kidney beans
Preparation
    Heat oil in large Dutch oven or heavy soup pot.
    Saute onion, garlic and peppers until the onion begins to turn translucent. Add tomatoes, beans and spices and simmer for at least 30 minutes. Serve over steamed rice.
