Shrimp Or Crawfish Au Gratin - cooking recipe

Ingredients
    1-1/2 lb. med. shrimp or crawfish, cooked in a little butter
    3/4 cup grated cheddar cheese
    3 Tbsp. chopped parsley
    1 stalk celery, chopped
    1 cup chopped onions
    1/2 cup chopped bell pepper
    1 tsp. minced garlic
    1/2 stick butter
    1/4 cup flour
    2 cups milk
    2 egg yolks, beaten
    1/2 tsp. red pepper
    1/4 tsp. black pepper
    1 tsp. salt
Preparation
    Saute vegetables in melted butter until well done, not browned.
    Blend flour into mixture, stirring constantly.
    Add milk, egg yolks and seasonings.
    Cook 5 to 10 minutes, until mixture begins to thicken.
    Add shrimp, parsley and 1/2 of the cheese.
    Blend well and pour into a casserole dish.
    Sprinkle remaining cheese on top and bake about 20 minutes at 350 degrees, until hot and bubbly.
    Serves 4 to 6.
