Mamaw'S North Carolina Oatmeal Cake - cooking recipe

Ingredients
    1 1/4 c. boiling water
    1 c. quick oats
    1/2 c. margarine
    1 c. brown sugar
    1 c. granulated sugar
    2 eggs
    1 1/3 c. flour
    1 tsp. soda
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 tsp. salt
    1 tsp. vanilla
Preparation
    Pour boiling water over oats and set aside.
    Cream together the margarine with the sugars.
    Add the eggs, beating after each addition.
    Whip up the oats and add to the creamed mixture.
    Sift flour, soda, cinnamon, nutmeg and salt together.
    Blend sifted ingredients with creamed mixture, then add vanilla; stir until well blended.
    Bake in a 7 1/2 x 11 1/2-inch loaf pan which has been greased and lightly floured.
    Bake at 350\u00b0 for 45 to 50 minutes. Remove and follow topping directions.
