Zucchini Cake - cooking recipe

Ingredients
    4 c. coarsely shredded zucchini
    3 c. flour
    2 1/2 c. sugar (I am going to use less)
    1 1/4 c. vegetable oil
    4 eggs, beaten
    1 Tbsp. plus 1 tsp. vanilla
    1 Tbsp. cinnamon
    1 1/2 tsp. salt
    1 1/2 tsp. baking soda
    1/2 tsp. baking powder
    1 c. chopped nuts (optional)
Preparation
    Heat
    oven to 325\u00b0.
    Grease and flour pan.
    Blend all ingredients on low speed 1 minute.
    Beat on medium for 1 minute. Pour into pan.
    Bake 50 to 60 minutes or until toothpick comes out clean.
    Cool 10 minutes and remove from pan and cool completely.
