Zucchini With Eggs(Zucchini Con Uova) - cooking recipe

Ingredients
    1/4 c. olive oil
    1 onion, sliced thin
    6 medium zucchini, washed, scrubbed and sliced
    1/4 tsp. salt
    1/4 tsp. pepper
    5 parsley sprigs, chopped
    1/2 c. water
    6 eggs
Preparation
    Heat
    oil
    in medium saucepan.
    Add the onion and saute until transparent.
    Add
    cut
    zucchini
    and
    saute
    for a few minutes. Add salt, pepper, parsley and water.
    Cover and cook on medium-low
    heat
    until
    zucchini is tender to fork.
    Make indentions
    in
    zucchini and place raw egg (out of shell) onto squash.
    Cover
    pan
    and
    cook 5 minutes.
    Close heat and keep covered until ready to serve.
    Makes 6 servings.
