Island Chicken And Rice - cooking recipe
Ingredients

2 Tbsp. vegetable oil
4 chicken breasts
salt and pepper to taste
2 Tbsp. cornstarch, divided
1/2 c. onions, chopped
1 (16 oz.) can sliced peaches, reserve juice
2 Tbsp. soy sauce
2 Tbsp. vinegar
1 medium green pepper, cut in small strips
1 medium tomato, chopped
3 c. hot cooked rice
1/4 c. slivered almonds, toasted
Preparation

Sprinkle chicken with salt, pepper and 1 tablespoon cornstarch.
Brown chicken and onions in oil until lightly brown. Blend peach juice, soy sauce, vinegar and remaining cornstarch; pour over chicken.
Cook, stirring constantly, until clear and thickened.
Add peaches, green pepper and tomatoes.
Simmer until green pepper is tender.
Serve over rice; sprinkle almonds on top. Makes 6 servings.
