Potato Soup - cooking recipe

Ingredients
    6 c. diced potatoes
    1 c. chopped onion
    1 c. chopped celery
    6 c. water
    2 sticks butter or margarine
    3/4 c. flour
    2 c. milk
    1 c. carrots
    1 to 2 lb. Velveeta cheese
Preparation
    Combine first 4 ingredients and bring to boil in large pot; cook until tender, do not overcook and do not drain.
    Simmer next 3 ingredients in separate pot until thick, stirring constantly. Add milk mixture to potato mixture.
    Microwave carrots in a little water for 6 minutes to soften.
    Add to soup mixture.
    Add cheese to soup mixture (more cheese the better).
    Be sure to use a large pot; makes a lot.
