Home Made Pasta - cooking recipe

2 1/3 c. Flour
1/2 tsp. Salt
2 Eggs, beaten
1/3 c. Water
1 tsp. Olive or vegatable oil

Hand Mix!! In a mixing bowl stir together 2 cups of flour and the salt. Make a well in the middle of the flour. In a separate bowl combine the eggs, water and oil and add to the flour. Mix well. Sprinkle the rest of the flour onto the surface to be used for kneading the dough. Knead the dough until it's smooth and elastic, about 8-10 minutes.
Cover and let it rest for 10 minutes. Dough can be refrigerated for 3 days or can be frozen for longer. Divide the dough into thirds and use a rolling pin or pasta machine to roll and cut the dough into desired forms of pasta. Makes 1 lb.
