Curried Carrot Soup - cooking recipe
Ingredients

1/2 stick margarine
1 medium onion, minced
1 tsp. brown sugar
1 Tbsp. curry powder
1/2 tsp. ground coriander
1/4 tsp. ground cardamon
1/8 tsp. nutmeg
1/2 tsp. ground ginger
1/4 tsp. black pepper
2 large carrots, thinly sliced
2 medium potatoes, peeled and diced
1/2 red bell pepper, seeded and chopped
3 c. vegetable stock
1 c. milk
Preparation

Saute onion in margarine in large skillet.
Stir in sugar and spices.
Add vegetables and stock.
Bring to boil, then simmer 30 minutes until carrots are tender.
Stir in milk and heat through. Garnish with yogurt.
