Bluefish And Potato Casserole - cooking recipe

Ingredients
    2 tsp. olive or vegetable oil
    1 1/2 tsp. margarine
    2 garlic cloves, minced
    2 Tbsp. chopped fresh parsley
    1 Tbsp. lemon juice
    6 oz. very thinly sliced all-purpose potatoes
    1/2 c. very thinly sliced red onion, separated into rings
    1/4 tsp. salt
    1/8 tsp. pepper
    2 bluefish fillets (1/4 lb. each)
Preparation
    Preheat oven to 450\u00b0.
    In small saucepan, combine oil and margarine; heat until margarine is melted.
    Add garlic and saute briefly, just until garlic is lightly browned.
    Remove from heat and add parsley and lemon juice; stir to combine.
    In medium mixing bowl, combine potatoes, onion, salt and pepper; add half of the oil mixture and toss to coat.
