Harvard Beets - cooking recipe

Ingredients
    6 medium beets
    1/2 c. sugar
    1/2 Tbsp. cornstarch
    1/2 c. vinegar
    2 Tbsp. butter
Preparation
    Wash beets. Cook in boiling water until tender.
    Remove skins and cut the beets in thin slices or cubes.
    Mix sugar and cornstarch.
    Add vinegar in saucepan. Bring to a boil and boil for 5 minutes, stirring constantly.
    Just as sauce is taken from the stove, add butter.
    Pour over beets.
    Let them stand on back of stove to absorb the sweet-sour flavor of the sauce.
