Bean And Broccoli Casserole - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 small onion, chopped
    3 medium carrots, grated
    1/2 lb. broccoli, chopped
    1 sweet red pepper, chopped
    1 clove garlic, minced
    1/2 lb. pinto beans, cooked
    1/2 lb. red kidney beans, cooked
    1/4 tsp. ground black pepper
    1/4 tsp. paprika
    1/2 tsp. Mrs. Dash
    1/2 c. boiling water
    1 Tbsp. vegetable bouillon
    2 c. warm cooked brown rice
Preparation
    Preheat skillet; heat oil.
    Add onion, carrots, broccoli, red pepper and garlic; stir-fry.
    Add beans, black pepper, paprika and Mrs. Dash to vegetables.
    Add water and bouillon.
    Cover and simmer for 20 minutes.
    Serve over rice.
    Makes 4 servings.
