Lacy Crab Puffs - cooking recipe

Ingredients
    Oil for deep frying
    2 (6 oz. each) cans fancy white crabmeat
    1 1/2 tsp. baking powder
    2 Tbsp. finely chopped onion
    1/2 tsp. Old Bay seasoning
    1 large egg
    1/2 c. all-purpose flour
Preparation
    Heat the oil to 375 degrees.
    Drain the crabmeat and reserve 1/4 cup of the liquid.
    Combine the reserved liquid with the baking powder.
    This will foam so be sure your container is large enough to handle it.
    Set aside. Combine the crabmeat, onion, Old Bay seasoning and egg.
    Mix well. Add the flour and mix. Stir in the baking powder mixture.
    Drop by tablespoons into hot oil
    Cook until puffs are browned on both sides.
    Drain well on absorbent paper.
    The puffs will look lacy due to the baking powder.
