Parmesan-Crusted Swiss Steak - cooking recipe

Ingredients
    2 1/2 lb. top round steak
    2 Tbsp. flour
    1 tsp. salt
    1/2 tsp. each: paprika and instant coffee
    1/8 tsp. garlic powder
    2 Tbsp. shortening
    1/4 c. chopped onion
    1/2 c. bouillon
    1/2 c. white wine
    1/2 c. grated Parmesan cheese
    2 Tbsp. mayonnaise
Preparation
    Score steak, making diagonal cuts about 1/2-inch in diameter. Mix flour, seasoned salt, paprika, coffee and garlic powder. Rub well into both sides of meat.
    In pan, heat shortening; brown meat.
    Add onion, bouillon and wine.
    Cover and simmer meat until tender, about 1 1/2 hours.
    Remove meat and thicken gravy with 1 teaspoon of cornstarch.
    Combine cheese and mayonnaise.
    Place over meat.
    Slip under broiler until glazed and brown.
    Serve steak with gravy.
