2 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
4 beaten eggs
3 c. finely shredded carrot
3/4 c. cooking oil
3/4 c. dried fruit bits
2 tsp. grated ginger root or 3/4 tsp. ground ginger
1 recipe Orange Cream Cheese Frosting
1 c. toasted, finely chopped pecans (optional)
