Sausage Ratatouille - cooking recipe

Ingredients
    1/2 lb. Italian sausage
    1/4 c. olive oil
    1 small onion, chopped
    1 small eggplant, cut in 1/2-inch cubes
    1 zucchini or yellow squash, sliced
    1 c. bell pepper, chopped
    1 clove garlic, minced
    1/2 tsp. oregano
    1/4 tsp. salt
    1/4 tsp. pepper
    1 small jar spaghetti sauce
Preparation
    Cook sausage in a large skillet over medium heat until brown. Stir to crumble; drain and set aside.
    Heat oil in skillet.
    Add onion and pepper; saute 2 minutes.
    Add eggplant and saute 3 minutes, stirring constantly.
    Add squash and garlic.
    Simmer 10 minutes.
    Add sausage and seasonings.
    Cover and simmer 5 minutes or longer.
    Add spaghetti sauce as desired.
