Ingredients

1 1/2 c. apple juice
1/2 c. uncooked rice
2/3 c. raisins
2 eggs
2 c. low-fat milk
1 tsp. grated lemon rind
1 tsp. vanilla extract
ground nutmeg
Preparation

Bring apple juice to a boil in a medium size saucepan.
Add rice, cover and simmer 15 minutes.
Add raisins and simmer, uncovered, for 5 to 10 minutes longer or until water is absorbed. Beat eggs until lightly mixed.
Stir in milk, lemon rind and vanilla.
Combine with rice mixture.
Pour into 1 1/2-quart casserole.
Sprinkle with nutmeg.
Bake at 325\u00b0 until firm, about 50 to 60 minutes.
Serve warm or chilled.
Yields 6 servings.
