German Potato Salad - cooking recipe
Ingredients

3 c. cooked red potatoes, cooled and diced
1/2 c. finely chopped celery
4 slices lean bacon, diced
2/3 c. water
1/4 c. cider vinegar
1/2 tsp. salt
2 tsp. poppy seed
1/4 c. finely chopped parsley
1/2 c. chopped onion
1 Tbsp. flour
2 Tbsp. sugar
1/4 tsp. dry mustard
Preparation

In medium bowl, combine potatoes, celery and parsley.
In large nonstick skillet, cook diced bacon, removing and discarding fat as it accumulates in pan.
Add onion and saute until onion is crisp-tender.
In small bowl combine water, flour, vinegar, sugar and seasonings; stir into onion mixture.
Continue cooking over medium heat until mixture thickens.
Remove from heat.
Pour sauce over potatoes.
toss gently to combine.
Serve warm or at room temperature.
Serves 6.
