Apricot Delight - cooking recipe
Ingredients

1 8 oz. pkg. cream cheese softened and cut into cubes
1 16 oz. can crushed pineapple with juice
2 6 oz. jars apricot baby food
1 6 oz. pkg. apricot flavored gelatin
2 c. water
2/3 c. sugar
1 12 oz. carton frozen, non dairy whipped topping

Preparation

Combine cream cheese, pineapple and baby food in blender container.
Blend on high for 30 seconds; set aside. Place gelatin, water and sugar in saucepan.
Bring to a boil over a high heat. Add cream cheese mixture. Stir until well blended and allow to cool.
Fold whipped topping into mixture.
Pour into 13 x 9 x 2 inch pan.
Top with whipped topping.
Garnish with
chopped nuts. Refrigerate.
