Black-Eyed Pea Soup With Smoked Turkey - cooking recipe

Ingredients
    1/2 lb. dry black-eyed peas
    1 1/2 lb. smoked turkey parts (bones included)
    1 Tbsp. corn or vegetable oil
    1 onion, sliced
    2 red or green peppers, sliced
    3 cloves garlic, minced
    1 tsp. fresh thyme or 1/2 tsp. dried
    1 tsp. fresh marjoram or 1/2 tsp. dried
    2 c. chicken broth
    2 c. water
    1/2 tsp. ground black pepper
Preparation
    Pour 1 quart hot water over the peas; cover and soak for 1 hour.
    After soaking, rinse at least twice in fresh cold water.
