Sauerbraten And Potato Dumpling - cooking recipe

Ingredients
    4 lb. beef (chuck, round or rump)
    1 onion, sliced
    3 bay leaves
    1 tsp. peppercorns
    1 tsp. salt
    vinegar and water
    1/4 c. sugar
    1/4 c. raisins
    6 to 8 gingersnaps
    1 c. sour cream (optional)
Preparation
    Rub meat thoroughly with salt and pepper.
    Place with onion, bay leaves and peppercorns into deep dish.
    Do not use metal dish.
    Heat equal parts vinegar and water and add sugar.
    Pour while hot over meat to cover.
    Cover dish well and refrigerate for 3 to 4 days.
    Turn meat daily.
