Funnel Cakes - cooking recipe

Ingredients
    2 eggs
    1 Tbsp. sugar
    2 pkg. Martha White biscuit mix
    1 1/4 c. milk
    1/2 tsp. vanilla
    confectioners sugar
Preparation
    Heat about 1-inch of oil in a skillet to 375\u00b0.
    Beat eggs well in large mixing bowl and add remaining ingredients.
    Stir until smooth.
    Holding opening of funnel covered with finger, pour 1/4 cup batter into wide mouth funnel.
    Run batter into hot oil using a slow wide circular motion and maintaining a steady stream. Fry, turning once, 1 to 1 1/2 minutes on each side.
    Sprinkle with confectioners sugar.
    Serve warm.
