Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini
    4 c. green onions
    1 green bell pepper, ground
    1 red bell pepper, ground
    5 Tbsp. salt
    2 1/4 c. vinegar
    4 c. sugar
    2 tsp. celery seed
    1 tsp. nutmeg
    1 tsp. turmeric
    1/2 tsp. dry mustard
    1 Tbsp. cornstarch
Preparation
    Mix zucchini, onions, green and red peppers and salt; let stand overnight.
    Drain.
    Rinse with cold water; drain well.
    Add vinegar, sugar, celery seed, nutmeg, turmeric, mustard and cornstarch; mix well.
    Cook for 30 minutes; place in clean, hot jars.
    Seal.
    Process in hot water bath for 10 minutes to complete seal.
    Yield:
    About 6 pints.
