Meatball With Eggplant - cooking recipe

Ingredients
    2 lb. ground beef
    1 eggplant, cooked in salt water for 2 minutes
    2 cloves garlic
    1 egg
    2 c. Monterey Jack cheese
    salt and pepper
    16 oz. tomato sauce
Preparation
    Mix all ingredients, reserving 1 1/2 cups cheese.
    Bake in oven for 1 hour.
    Top with cheese.
    Bake 1/2 hour longer.
