Seafood Newburg - cooking recipe

Ingredients
    2 Tbsp. butter
    1 medium onion, finely chopped
    2 large baking potatoes, peeled and cut in 1-inch cubes
    1/2 tsp. salt
    1/4 tsp. pepper
    2 1/2 c. chicken stock
    1 (1 lb.) pkg. frozen mixed vegetables, drained
    1 lb. shellfish
    1/2 c. half and half
    2 Tbsp. cornstarch
    2 Tbsp. Dijon mustard
    2 Tbsp. dry sherry
    2 tsp. fresh lemon juice
    1/4 tsp. paprika
Preparation
    Melt butter in a large saucepan over moderate heat.
    Add the onion and saute, stirring occasionally, for 5 minutes or until limp.
    Add the potatoes, salt and pepper.
    Cook, stirring, for 1 minute.
    Add the stock, cover and simmer for 5 minutes.
    Add the vegetables, cover and simmer for 5 minutes.
